Making Masala Dosa - Again

Masala dosa in my opinion is one of those dishes which are easy to prepare and taste delicious. Not sure why so many people buy readymade dosa batter when you yourself can make one at home so easily. Here we go for dosa batter recipe.

  • 3 Parts of Rice flour
  • 1 Part of Urad flour
  • Teaspoon of salt
  • Water

Mix 3 parts of Rice flour with 1 part of urad flour. Sift this mixture thoroughly. Add pinch of salt to mixture. Now begin by adding water to this mixture. Add it step by step. You certainly do not want to make it too much. Add some water, mix it. If you feel like mixture is dry, add some more water. To give you an idea, the final dosa batter should have consistency similar to that of a molten lava. (Now please don't ask me how did I measure that consistency against real molten lava)

If you make it too thin, dosa won't be even visible when you cook it. If it's too thick, besides other problems you will have problem spreading it on the non-sticky pan

Also, did I tell you that you will have to use non-sticky pan. Otherwise those dosas will stick to pan and make it difficult to get them off from a bottom.

Ferment this dosa batter for at least 24 and at the max 48 hours. From my own experience 36 hours works quite well.

Now once your batter is set, get ready to make dosas. As I mentioned earlier, you will need a non-sticky pan. Use a spoon with round bottom. It will help you spread dosa batter as soon as it is poured on the pan.

To make Dosa Circular :

Set the gas on a medium high heat. Let it heat properly for 5 minutes. Take spoonful of dosa batter in spoon with circular bottom. Pour mixture in the center of pan. Now place the bottom of spoon on the poured batter and make your way outward towards pan boundary moving your spoon in the outward spiral fashion. This will help spread the batter and also make the circular shape out of it.

Let dosa batter sit and cook for couple of minutes. Now take oil in the teaspoon and pour it over dosa. Make sure you spread oil all over it and around border. This will facilitate taking dosa off from pan once cooked.

Cook it for another 3-4 minutes until it turns brown. Now turn it to the other side and let it cook for another 3-4 minutes.

Your dosa is now ready. Serve it hot with coconut chutney or spicy potato masala.
